Marinated pork ribs with fan potatoes

Marinated pork ribs with fan potatoes

Put the meat with the rest of the ingredients in a bowl (cut the onion and pepper into onion slices separating them into rings) and put the bowl in the fridge for at least an hour.

Meanwhile, prepare the potatoes: peel them and cut them into slices, but not completely, and add salt and oil.

In a small yena bowl put the meat with the sauce formed and in another bowl put the potatoes with a little oil (I put the steak in a small round bowl and the potatoes in a rectangular bowl, so that it fits in the stove oven) and put it in the oven heated to 180 degrees for an hour and a half, until the meat is well done (check it with a fork from time to time).

When it's ready on the plate, put a portion of ribs and a few potatoes on which I put a little grated Parmesan cheese.

Good appetite!

Marinated Pork Ribs, Carrots and Baked Potatoes

Place the meat on an aluminum foil. Mix the ground spices in a bowl then place 3/4 on the fleshy side of the ribs. Rub these on the meat and then put the rest of the spices on the edges and on the bone side. In the same bowl, mix the soy sauce, Worcestershire and Frank's. Pour evenly over the meat, distributing lightly. Wrap the ribs in aluminum foil and leave in the fridge for at least 30 minutes.

Meanwhile, bring two pans to a boil with water and a little salt. If you have new potatoes, put them in one of the pans with water when it boils and if you have old potatoes, put them in the beginning when the water is cold. In 90% Boil, strain them and let them cool. Put the carrots in the other pan and boil them in a percentage of 70%, then strain and set them aside.

In a bowl, mix the garlic and olive oil.

Preheat the oven to 180 C (gas 4). Take the meat out of the fridge, peel off the foil and arrange it in a tray. Grease it with a little olive oil then place the ribs face down. Cover them with another aluminum foil. Put in the oven and set the clock for 30 minutes.

Lightly mash the potatoes. Remove the tray from the oven (after 30 minutes) and place the potatoes next to the ribs (do not take the foil off the ribs). Sprinkle rosemary, salt and pepper over the potatoes. With a teaspoon, put olive oil and garlic on top. Put the tray in the oven for 30 minutes, then take the foil off the meat and leave for another 15 minutes.

Mix the sauce ingredients in a bowl. Remove the pan and grease the meat with sauce on top. Put the tray back in the oven but move to the grill. Leave for 1-2 minutes or as crispy as you want. Turn off the grill and leave the tray with ribs and potatoes in the oven with the door cracked for at least 5 minutes. Meanwhile, fry carrots in butter in a pan and season.

Remove the ribs, portion and serve with carrots and potatoes.

* Depending on the thickness of the meat on the ribs, it should not be at a temperature less than 71 c (160 f).
This recipe is among my favorites in the pork ribs category. The combination of ingredients gives a great taste. If you make them at bbq they will be even better.

What spices to use for pork and how to marinate meat?

Chops, ribs, neck, leg & pork sausages sit on the holiday tables. Learn to give them new flavors with the most suitable spices.

We got used to browning the meat only with salt and pepper, according to the traditional recipe. Peel a squash, grate it and add it to the toast. In search of the healthy version of pork steak, however, we suggest you to adopt only the recipes in the oven and to give up the garnishes in favor of spices. There are some spices that know how to highlight your steak.

Whether you make a marinade in which you keep the meat tender for a few hours, or you prepare only a mixture of spices to flavor the steak, here are the strong flavors you can choose:

  • cumin or cumin
  • curry powder
  • rosemary
  • sage
  • dill
  • garlic
  • thyme
  • fenician
  • hot peppers or paprika

Seasoning or marinating pork?

For grilled steaks, which are cooked in a short time, it is recommended meat seasoning. That is, the use of a mixture of spices, herbs and salt, with which to rub the pieces of meat. They give the aroma of steaks, but do not tenderize the meat. Instead of the ones you already find prepared in the store (and which also contain a lot of salt) you can make the mixes at home yourself. You can prepare a larger quantity to keep in an airtight container for several months. You can season the meat and use it immediately or leave it in the fridge for up to 24 hours. If the spice mixture comes in contact with the meat more than that, the salt in it will start to dehydrate it.

Marinating it is recommended for tenderizing pork and for recipes in which the cooking time is longer, such as browning in the oven. Marinades are a mixture of oil, an acidic ingredient (vinegar, wine, soy sauce, orange juice), herbs and spices. It is not recommended to add salt to the marinade because it will dehydrate the meat.

To marinate the pork, use either a plastic or ceramic bowl or a plastic bag. You don't need to completely cover the meat in the marinade mixture, but you have to let it sit like this for at least 2 hours before cooking it.

Marinade ideas:

  • Teriyaki style - mix soy sauce, water, sugar, Worcestershire sauce, vegetable oil, sliced onion, crushed garlic and grated ginger
  • In Hawaiian style & ndash mix mashed pineapple, soy sauce, honey, vinegar, crushed garlic, ginger powder, clove powder.
  • Mediterranean style & ndash mix Dijon mustard, olive oil, wine vinegar, dried sage, bay leaves and crushed garlic.

10 suitable potatoes
1 handful of cherry tomatoes
1 handful of Kalamata olives
oil
1 piece with 6 lamb ribs
a few sprigs of rosemary
6 cloves of garlic
salt
pepper

Preheat the oven. Boil the potatoes in boiling salted water for 10 to 15 minutes or until soft, then drain. Meanwhile, squeeze the tomato seeds and remove the olive seeds.

Heat a generous amount of oil in a pan over high heat, add the lamb ribs and brown them, then take them out on a plate.

Cut the boiled potatoes and turn them over in the pan, then fry them for a few minutes over medium to low heat. Add the tomatoes and olives to the pan, then season with salt and pepper to taste. You pick the rosemary leaves, spread them over the peeled garlic cloves and put them in a tray and sprinkle everything with a little oil. Pour the vegetables from the pan into the baking tray.

Place the piece of lamb ribs over the potatoes in the pan and put it in the oven. Depending on how big or small the ribs are, it will take between 20 and 30 minutes to ripen. The meat will be pink in the center, so you can add 5-10 minutes to the cooking time, if you like it to be better done.

When the lamb ribs have browned, you slice them and you get 6 chops. Serve hot with crispy potatoes from the pan. If you want, serve with a green salsa sauce or a drop of oil.
